National S'more Day

Did you know today is National S'more Day...who comes up with these national days anyways. Well, I wont complain because I love S'mores and the more reason to eat them the better. 


Remember the S'more Station


Well I am having a BBQ tonight but I am not in the mood to recreate this. Plus those dishes are being rented out... So I thought maybe making a S'more cupcake for dessert.


I haven't done it yet but I'm thinking Chocolate Cupcake with this frosting and a sprinkle of graham cracker on top.

Marshmallow Frosting:



4 large egg whites
1 Cup ordinary sugar (white or brown)
1 pinch of salt
1 tsp vanilla extract
Place all ingredients except the vanilla extract into a bowl which you can place over a pot of simmering water.
{You could use a double boiler here instead}


*Whisk the egg white mixture constantly over simmering water until the sugar dissolves and the mixture is hot to the touch. {It takes around 5 minutes}.


*Pour the mixture into a bigger bowl and beat with an electric mixer for 3 minutes. {Add the vanilla while beating}. After 3 minutes, the mixture will be lovely and fluffy.


*Then Frost
I love using disposable piping bags by Wilton – {or you could even use a plastic bag} without a nozzle, but I found the disposable piping bags and you cut the tip off and then insert your frosting tip it will work every time.
