The Best Taco Soup

I got this sweet email from a reader and so I decided to share the recipe on this blog. Thanks Emily for being a reader and for making me realize I haven't shared it on this blog.

"I happened upon your regular blog a while ago- and found your Taco Soup recipe! I've been using it for a while.. and went back to use it tonight and your old blog was blocked- and I never wrote the recipe down! I was wondering if there was any way you could post that recipe on this blog so that I could write it down and use it again!! It's the best one i've tried!! Thank you so much!"

What you need:

1 lb ground beef
1 onion finely chopped
1 medium can of diced tomatoes
1 medium can of tomato sauce
1 can red kidney beans (drain Juice)
1 can black beans (drain juice)
1 can sweet corn (DO NOT drain)
1 package taco seasoning

throw it all together into a pot or crock pot and simmer for 45 mins to an hour.
this soup is thick almost like a taco chili and you could eat it with chips or corn bread.

I like to eat it with fresh diced avocado, a little sour cream, cheese, and tortilla strips!

not only is this quick and tasty but its also great as leftovers.

Button Cookies

Today I am helping two other friends throw a baby shower. The shower theme is "cute as a button" and one of the treats I am making are these button cookies. . .




I got the idea here so go check it out to see the fun tutorial (which I recommend following and do not try to use a box mix like me because they don't turn out as good) I did sugar cookies because I like them better then peanut butter but mine lost their form in the oven. So if this happens to you then when you pull them out of the oven and they are still soft, mold them then again with a bottle cap and a straw.

Fruit Pizza




My side of the family had a big Sunday dinner and I was in charge of dessert. It was my mistake that I didn't make enough of this because it was gone in seconds. I was lucky I got to even take a picture of the final outcome before hands were reaching in from all corners to get a taste.

THINGS YOU NEED:
2 things of frozen sugar cookie mix
1 8 oz tub of cream cheese (I like strawberry)
A spoon full of any type of fruit preserve (I used raspberry and apricot)

To be honest I made up the cream sauce and I know some add yogurt but I just added in stuff until it gave me the taste and consistency I was looking for.

Then cut up fruit. (I used pears, mangos, strawberries, raspberries, and bananas)


* Tip* I would of liked to add some small toffee bites to give it a little crunch.


INSTRUCTIONS:
Roll out cookie dough onto a cookie sheet.
Mix together cream cheese and jam.
Spread onto warm cookie right before serving or else it will get soggy.
Then add the fresh fruit and toffee bites.
