White Chocolate Key Lime Pie
You can use key limes or regular limes for this pie.
This pie is very rich and creamy. The perfect combo of sweet chocolate and tart lime. The name of this pie just sounded like it would take forever to make that I wasn't even going to attempt to make it; however it is super easy and OH-SO worth it! Well, maybe not for your thighs because you WILL eat more than one slice :)
PRETZEL CRUST: My favorite with this pie
- 1 1/4 cups crushed pretzels
- 1/2 cup white sugar
- 3/8 cup melted butter
To Make Crust: In a bowl, combine pretzel crumbs, sugar, and butter. Dig in with your hands, and cover your pie tin with this yummy crust.
-OR-
you can use a graham cracker crust
PIE FILLING:
PIE FILLING:
- 1 cup whipping cream
- 11 oz. white chocolate chips
- 1 tablespoon sour cream
- 1 teaspoon lime zest
- 1/3 cup lime juice
In a small sauce pan, melt the white chocolate chips and the cream. Cook this over low heat until creamy. While stirring, add lime zest and juice. Next add the sour cream. Make sure you add this at the end so it doesn't curdle over the heat.
Pour into your pie crust then cover and place it in the fridge over night.
I used the store bought crust because I had one BUT it isn't nearly as good... so make the homemade kind and you won't be sorry. I like using the Pretzel crust because the salty pretzels complement the richness of the sweet key lime pie.
bowling with the limes of course. Duh!! Why didn't I think of that;)
When the pie is done, you can garnish it with limes and chocolate or just skip that step and dive right in :)
